Bean and Vegetable Stew



  • 1 tbsp. olive oil
  • 1-2 cloves garlic
  • 1 green pepper, diced
  • 1 small onion, diced
  • 2 cans of diced tomatoes and green chilies
  • 1 can pinto beans


  1. Heat oil in a pan and add garlic, green pepper and onion.
  2. Sauté for 2-3 minutes, then add cans of diced tomatoes and beans.
  3. Let simmer for 15 minutes, then enjoy!
